Caramel ice cream is quite easy to make and tastes delicious and unique at the same time. In this article you will learn about making a rich and creamy caramel ice cream and a tempting caramel sundae.

                                                                                  Caramel Ice Cream 

Ingredients for the caramel

  • 1 cup granulated Sugar

For the ice-cream

  • Four egg yolks
  • 225 ml milk (skimmed or full fat)
  • One vanilla pod
  • 455 ml double cream
  • 1/2 cup sugar

How to make it:

Firstly you need to prepare the caramel in a deep bottomed sauce pan. Take the granulated sugar and let it boil on medium heat. Do not stir it even if you are tempted to do so. The sugar will melt on its own .Swirl it around the pan for attaining an even brown colour.

Remove it from the heat and add 100 ml of cream to the caramelized sugar. Be careful while pouring it as it may spit and bubble. Return it to the heat and stir constantly until it turns into a thick and sticky mixture. Remove from the heat and put it aside.

Take a second pan and scrape the vanilla pod seeds into the remaining amount of the cream. Add some milk and heat the mixture until it almost starts boiling. Do not let it boil.

Take it away from the heat and pour the mixture over the caramel, stirring constantly for mixing it properly.

Take another bowl and mix the remaining sugar and the egg yolks together and whisk them until the sugar dissolves.

Pour this yolk and sugar mixture into the pan along with the other cream and caramel mixture and heat over a gentle flame. Stir constantly so that the caramel doesn’t become lumpy.

Take it off from the heat after 10 minutes or when it becomes thick. Put this mixture into the ice cream maker and let it churn. After it has been churned, put it in the fridge and let it freeze for a few hours.

This recipe works very well with fruits like pears and bananas.

                                                                          Caramel Sundae


  • One banana
  • One cup Caramelized sugar
  • Two tablespoons dark rum
  • Two scoops of caramel
  • 25 grams of butter
  • Two ginger biscuits
  • Two pieces of dark chocolate
  • One scoop vanilla
  • Whipped cream
  • Caramel Ice cream

How to make it

Firstly, crumble and crush the ginger biscuits at the bottom of a tall glass and pour the dark rum over them.

Fry the banana in the caramelized sugar and butter until it is soft and then slice it into pieces.

Put one scoop of the ice cream into the glass and then add the banana pieces. Follow up with more banana pieces, some vanilla and a generous dollop of whipped cream.

Finish by grating the dark chocolate pieces and sprinkling them over the whipped cream.

You can add some chocolate sauce to the sundae if you feel like.
